A vegan take on the classic Bacon, lettuce & tomato sandwich.
1 Aubergine ("Bacon"), sliced lengthways
3tbsp Shaws Devilish Tomato & Chilli Relish
4 slices Bread of choice
3tbsp Vegan Mayonnaise
1 large Tomato, sliced
½ Avocado, peeled, sliced
Lettuce leaves, washed
1. Pre-heat the grill.
2. Brush the aubergine slices with oil and sprinkle with a little salt. Place the slices on the grill rack and grill for 2-3 mins or until golden.
3. Turn the slices over and spread over the Devilish Tomato & Chilli Relish and place under the grill for a further 2-3 minutes until bubbling.
4. Meanwhile, spread the slices of bread with vegan mayonnaise. Layer 2 of them with lettuce leaves, tomatoes and avocado.
5. Remove the aubergine from the grill and place on the sandwich. Cover with bread, slice in half and enjoy!
