Pep up plain rice with warming spices, perfect partner to grilled chicken.
½ jar Shaws Heritage Spiced Apricot & Ginger Chutney
150g Long grain rice
½ can Chickpeas, drained & rinsed
½ Red Pepper, diced
1 tbsp Olive Oil
½ Lemon, juice of
1 tsp Turmeric
1 tsp Cinnamon
1 tbsp Coriander, chopped
50-100g Feta cheese, crumbled
1 tbsp Flaked Almonds (optional)
1. Cook the rice as per the packet instructions.
2. In a bowl mix the Shaws Heritage Spiced Apricot & Ginger Chutney with the olive oil, lemon juice, turmeric & cinnamon. Taste and add a touch of salt if required.
3. Stir in the rice, pepper, sultanas, coriander.
4. Place in a serving dish & crumble over the feta cheese & sprinkle the sliced almonds.
