Curried Egg Sandwich

Perfect for "Back to School" packed lunches but great for the whole family!

What you will need

Bread of choice (we used brown sandwich thins)
6 Eggs, hard boiled
1 tbsp Mayonnaise
1 tsp Mild Curry Powder
2 tbsp Shaws Chunky Mango Chutney
1 tbsp Minced Celery (optional)
Salt & Pepper

Method

1. Place the peeled eggs in a bowl and chop with a knife into smaller chunks, then using a fork "mash" until the desired consistency.
2. Add the Mayonnaise, Mango Chutney, Curry Powder, Celery (if using - finely grate and squeeze out the excess water) and seasonings.
3. Mix until well combined.
4. Fill the bread with the mixture to make sandwiches.
